14 Kid-Friendly Veggie-Loaded Breakfast Recipes
I’m a big believer that vegetables belong at all meals. Yes, even breakfast. Vegetables are a rich and dense source of so many vital nutrients, vitamins, and minerals. They are the first food group I reach for when making any meal and try my darnedest to make sure it is the one my family eats the most of. However, when you have a kiddo at the dining room table, some times the appearance of vegetables is not very welcomed.

Especially at breakfast. Many of the foods people associate with breakfast are not veggie heavy, but that really shouldn’t stop you from breaking out this oh-so vital food group first thing in the morning.
After all, breakfast is 1/3 of what you and your family eats, so the goal should be to make it as nourishing (and tasty, of course) as possible.
So how do you open those little eyes to the wonders of veggies at breakfast? With creative dishes that are delicious, unique, and fun! Does this mean that your child won’t possibly reject the veggies and/or turn up their adorable little noses to the new breakfast dishes? Um, sorry guys, but unlikely. Children naturally tend to reject the unfamiliar (especially when it comes to food) so you are going to have to put on your mama or papa hat and be patient and persistent (what we do best!) when it comes to helping your children embrace the change in the breakfast menu.
Children require a new food to be presented to them between 5-10 times (sometimes more) before it becomes less intimidating and they are more likely to be open to trying it.
I kid you not, I offered my daughter broccoli so many times that I thought for sure she was never going to eat it. And then, one day at a friend’s house, she picked up a piece of roasted broccoli and went to town. Now it is one of her favorite things to have for a meal…even breakfast.
