I have been getting so many emails lately from you guys. And, man, how I love hearing from each and every one of you. I love when you tell me how one of my recipes has been a game changer for your picky eater. Or that one of my meals has become a regular in your house. Or when you struggle with a recipe and let me troubleshoot ideas with you. Seriously, I love knowing you guys and knowing that my recipes aren’t just being shot out into the black hole that is the internet...that they are actually being put to use in your homes to feed your families better.
But one message I’ve been getting more and more lately is that some of you are struggling. You have some serious allergies in your homes and you are trying to made food fun, delicious and healthy...all while dodging a major food allergy. It can be tricky stuff and many of you have been asking for more egg-free and/or nut-free recipes with my TNN twist on them....and I'm hearing ya!
And I hear you. So guys, this recipe is especially for you....
...and right in time for the holidays!
Chocolate and peppermint is, hands down, my favorite holiday flavor combo. Chocolate anything makes me giddy, but when you add peppermint into the mix.....oh boy, am I in love!
During the holidays, cookies are everywhere. Like....everywhere. At cookie exchanges. In festive little cookie tins from your neighbor. Lurking in the staff room at work. Or just sitting out waiting for Santa to come and eat them.
Cookies. Are. Everywhere.
So, I figured since I was making this amazing (and it is amazing, guys) allergy-friendly cookie recipe, I might as well do what I do best and add some hidden green goodness into the mix! In with the Paleovalley Supergreens!
Before you scrunch up your nose at the idea of greens in your perfect chocolate cookie...trust me on this one. No one will ever know this good-for-you supergreens powder is even in the cookies! The Paleovalley Supergreens has this great natural sweetness to it, so it won't weigh the cookies down with some weird earthy flavor! And all that chocolate hides any green color that might tip your family off to the healthiness hiding inside every bite of these *fabulous* double chocolate peppermint cookies. When they gobble these cookies up, your family will unknowingly be chowing down on turmeric, kelp, ginger, aloe, spirulina, apples, spinach, broccoli and a boatload of other amazingly healthy goodness. I LOVE adding Paleovalley Supergreens into my family's bakes goods and smoothies, as it is just one more way that I can make sure they are getting the nutrients they need to stay healthy.
So, while the Paleovalley Supergreens are an optional ingredient in this recipe, they are oh-so highly suggested in our quest to find health and balance while enjoying the holiday cheer!
