Super Fudgy {veggie-loaded} Brownie Bites (Paleo, dairy-free)
Perfectly fudgy, super delicious and with a dose of hidden veggies in the most unexpected place, Super Fudgy Brownie Bites are simply a must-make for when you sweet tooth calls. So delicious and decadent, these chocolate miracles are also Paleo, gluten free and dairy-free.
With Valentine's Day being right around the corner, everyone seems to be turning their attention from their clean eating goals of January to everything chocolate for February. And while I totally get it, I've always felt like there must be a way to have you cake and eat it too (pun totally intended).
You see, I love chocolate. Deeply. Profoundly. Truly. It will always be something I enjoy and no matter how clean and healthy I eat, I plan on having chocolate in my life.
With that said, I also truly believe that everything you eat should also serve your body in some way. That even when you are enjoying an indulgent treat, that your body (beyond your taste buds) is getting something positive out of the food you are taking in.
Which is why I did something radical, guys. I put veggies in brownies.
Green veggies, at that. Veggies that your body craves and benefits from.
And the outcome? Amazingly fudgy delicious, decadent brownies that will satisfying your strongest of chocolate cravings but that will actually give your body some real amazing nutrients. Brownies that your children, spouse, friends and coworkers will INHALE because they will be none the wiser to the veggie-loaded goodness that awaits them in these brownies.
And while these brownies are still totally a treat, you can feel good knowing that you are enjoying and sharing a treat that will serve up some veggies into the lives and bellies of those you care about.
